The Anatolian name funduk refers to the infrastructure of hospitality’s history, the manner in which we relate to ourselves and to others. The word comes from Greek pandocheion, “welcoming all”, which also led to the Arabic funduq (فندق) or pundak in Hebrew (פונדק‎), fundaco in Venetian, fonda in Spanish.
